This Golden Lentil Soup is the perfect cold-weather comfort food when you're craving something as delicious as it is nourishing. Plus, it's simple to make and freezes beautifully!
Heat oil in a soup pot over medium heat. Add onions and cook, stirring frequently, for 5-7 minutes until they begin to soften and turn translucent. Stir in carrots and celery and cook, stirring occasionally, for 10 minutes. Add garlic and tomatoes and cook for 1 minute until fragrant.
Add lentils, 3 cups of stock, pepper, and bay leaf. Stir to combine. Increase heat to high and bring to a boil. Once boiling, reduce heat to a simmer. Cover and cook for 20 minutes until lentils are tender.
Remove bay leaf and stir in Golden Superfood Bliss, salt, and lemon juice. Taste and adjust seasoning, as needed. Store leftovers in the fridge for up to 4 days or in the freezer for up to 3 months.
