These Gluten-Free Pumpkin Collagen Scones are easy, wholesome, and boosted with Collagen Peptides. They’re perfect for brunch, an afternoon snack, or any time of day!
1/4 cup unsalted butter, softened
1/4 cup coconut sugar
1/2 cup pumpkin puree
1 large egg
2 cups blanched almond flour
2 scoops Collagen Peptides
1 teaspoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon salt
In a large bowl, cream butter and coconut sugar together until well combined. Then add pumpkin puree and egg and mix thoroughly.
Add in almond flour, Collagen Peptides, pumpkin pie spice, baking soda, and salt. Mix until just combined, scraping down sides as needed.
Cover the bowl and refrigerate for 45 minutes.
Preheat the oven to 400 F°. Line a baking sheet with parchment paper and set aside.
Remove the mixture from the refrigerator, transfer the dough mixture to the prepared baking sheet and shape into a disc about 1-inch thick.
Cut the disc into 8 equal triangles and gently move each triangle so they are all an inch away from each other.
Bake the mixture for 20 minutes until the edges turn golden brown. Once done, remove from the oven and let it cool for 10 minutes and serve.
