Golden Lemon Poppyseed Muffins
2 1/2 cups almond flour
1/2 cup arrowroot starch
2 scoops Golden Superfood Bliss
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 cup unsalted butter, room temperature
3 large eggs, room temperature
1/3 cup maple syrup
1/3 cup almond milk
2 tablespoons lemon juice
1 teaspoon vanilla extract
2 tablespoons lemon zest
2 tablespoons poppy seeds
Preheat the oven to 350°F. Line a standard muffin tray with muffin liners and set aside.
In a medium bowl, add the almond flour, arrowroot starch, Golden Superfood Bliss, baking powder, baking soda, and salt. Mix well until combined without any lumps. Set aside.
In a large bowl, cream the butter and eggs together. Add the maple syrup, almond milk, lemon juice, and vanilla extract and mix again.
