Ingredients

1/2 cup butter

1 cup nut butter

1 tablespoon vanilla

Pinch of sea salt

1/2 cup nut milk

3/4 cup coconut sugar

1/2 cup Cacao Bliss

3 cups raw oats
Directions
In a large saucepan over medium heat, combine grass fed butter, nut butter, vanilla, sea salt, nut milk, coconut sugar, and Cacao Bliss. Stir until combined.
Add 3 cups raw oats and mix well. Use a tablespoon to scoop out cookie mixture, place on a parchment lined cookie sheet. Cool in the refrigerator to firm up before serving.

I’ve been making similar recipe, that may be healthier. Instead of sugar & nut milk I soak 1/2 cup of dates in 1/4 cup hot water, then puree them. I also sub 1/2 of the oats for shredded coconut and reduce the butter. The butter can be subbed for cocoa butter or coconut oil too. I freeze them and they are great cold. Sometimes I even add a banana to the date mixture.
