Chocolate Mint Cookie Recipe
These Chocolate Mint Cookies are the perfect recipe to make with your kids if you have them, or to bring to your next gathering. (Or just keep them all to yourself!) They're made from wholesome ingredients and packed with the nourishing, decadent, chocolatey power of Cacao Bliss!
- 1 cup almond flour
- ½ cup Cacao Bliss
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ¼ cup unrefined coconut oil
- ¼ cup creamy almond butter
- ¼ cup pure maple syrup
- ¼ cup organic coconut sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon peppermint extract
- 1 large egg
- 1 cup dark chocolate chips, 70% cacao or higher
Preheat oven to 350ºF. Combine dry ingredients except for coconut sugar in a bowl and set aside.
With an electric hand mixer, cream together coconut oil, almond butter, maple syrup, and coconut sugar until smooth.
Add in the vanilla, peppermint, and egg.
Beat on medium speed, then stir in the dry ingredients until thoroughly combined. Gently stir in the chocolate chips to evenly distribute.
Chill the dough in the fridge for 60 minutes.
Using a small cookie scoop, scoop dough onto a parchment-lined cookie sheet about 2” apart.
Bake in the middle rack for 12-14 minutes or until cookies are set and tops are bumpy.
Allow to cool on the baking sheet 2 minutes, then carefully transfer to wire racks to cool completely.
