If you’re an “I don’t have time in the mornings to eat breakfast” person, you’re not alone. But you’re also not starting your day off with the nutrients you need to get your body revved up and ready to tackle your day.

That’s why overnight oats have become a go-to breakfast for me. (My family loves them, too.) They’re so easy to prep the night before and grab in the morning that “I don’t have time” is no longer an excuse.

I make all kinds of overnight oats, but one of my favorite recipes features a surprise ingredient — Earth Echo Collagen Peptides

Collagen Overnight Oats Recipe

 INGREDIENTS:

  • ⅓ cup unsweetened oat milk (or nut milk of your choice)
  • ⅓ cup raw oats
  • ¼ cup plain Greek yogurt
  • ¼ cup fresh or frozen fruit of your choice
  • 1 tablespoon chia seeds
  • ¼ teaspoon pure vanilla extract
  • 1 tablespoon pure maple syrup
  • ¼ teaspoon cinnamon
  • 1 scoop Earth Echo Collagen Peptides
  • 1 tablespoon raw almonds or walnuts, chopped

DIRECTIONS:

  1. Combine all ingredients into a Mason jar and shake until combined.
  2. Store in the refrigerator overnight. Enjoy in the morning!
