Looking for a recipe to satisfy all your cozy cravings? This Vegan Golden Spiced Lentil Dal Curry is simple to make, packed with flavorful spices, and boosted with the nourishing power of Golden Superfood Bliss!
1 1/2 cups red lentils
2 tablespoons olive oil
1 cup diced yellow onion
1 teaspoon whole peppercorns
3 garlic cloves, minced
1 inch ginger, peeled and grated
2 scoops Golden Superfood Bliss
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon ground coriander
1 teaspoon curry powder
4 cups vegetable broth
1 teaspoon salt
1 cup coconut milk
1 tablespoon lemon juice
2 tablespoons coconut cream
2 tablespoons cilantro
1 tablespoons chili flakes
Add red lentils to a large bowl filled with water. Swish the lentils around to give them a thorough rinse and then drain. Set aside.
In a large pot, heat oil over medium heat. Add onions, whole peppercorns, garlic, and ginger. Stir frequently until onions are translucent.
Add in the Golden Superfood Bliss, cumin, paprika, coriander, and curry powder into the pot, along with a splash of water to help keep the spices from burning. Cook, stirring often, for a few minutes until fragrant.
Add rinsed and drained red lentils, vegetables broth, and salt to the pot. Bring to a boil, then reduce to a simmer and cook for 30 minutes, until lentils are tender.
Once the red lentils are done, stir in coconut milk and simmer for 5 minutes. Remove from heat and stir in lemon juice.
Serve with naan or over rice, topped with coconut cream, cilantro, and a sprinkle of chili flakes.
