Preheat the oven to 350ºF and spray an 8x8 inch baking pan with nonstick cooking spray and set aside.
Add bananas, eggs, and vanilla to a blender and blend until smooth.
In a large bowl, whisk together almond flour, coconut flour, Cacao Bliss, baking soda, baking powder, and salt. Gently fold in the wet mixture and stir until well combined.
Next stir in chocolate chips, reserving a few tablespoons. Spread batter evenly into the prepared pan and sprinkle the remaining chocolate chips on top.
Bake for 25-30 minutes or until a toothpick comes out clean.
Once done baking, transfer the pan to a wire rack to cool for 20 minutes before cutting into 12 slices.
*Please note, photo indicates loaf pan but this recipe bakes best in an 8X8 square pan. If you opt for a loaf pan, you will need to adjust your cooking time accordingly.
I made it last night and it’s delicious and extremely moist, I cooked it for 1 hour and 15 mins, the recipe calls for 20-30 mins but it wasn’t cooked at all, it turned out great and very tasty
Dairy refers to milk, cheese, butter, etc.; so, any dairy product might be in the chips used. If you want it to be vegan, you would need to use egg replacement and dairy-free chips.
I would think you could use flax eggs instead (1 flax egg = 1 T. ground flax seed + 3 T. water). I plan to try this!
I rarely submit comments about recipes but this one is an exception. I was initially suspicious since there is no oil or sugar in this recipe at all but I plunged forward & followed it anyway (but used (4) egg whites rather than (2) eggs & gluten-free flour to substitute for the almond flour, which I didn’t have). Used mini-chocolate chips & baked in (2) mini-loaf pans at 350 for 34 min.
Well. THIS BREAD IS AMAZING!! My husband (who about never eats sweets) had (2) slices. I doubt there’s a healthier bread on the planet. It’s moist & sweet enough just as is. Thank you!!
My only other observation is that it’s not really “dairy free” with 2 eggs in it. I’d appreciate substitutions so I can make this for my vegan son-in-law.
