Golden Sweet Potato Breakfast Bowl
Tired of the same old breakfast? Smoothies and oatmeal are great but why not switch things up a bit with this easy, healthy Golden Sweet Potato Breakfast Bowl recipe?
1 small sweet potato
1/4 cup unsweetened almond milk
1 teaspoon cinnamon
1 tablespoon ground flaxseed
1 scoop Golden Superfood Bliss
Toppings: Fruit, nut butter, granola, Greek yogurt, coconut flakes, etc
To bake the sweet potato, preheat oven to 425° F and line a small baking sheet with parchment paper or foil. Prick sweet potato all over with a fork and place it on the baking sheet. Bake for 45-50 minutes, until tender. When cool enough to handle, slice sweet potato in half and scoop flesh into a medium bowl.
To boil, peel the sweet potato and cut into 1-inch chunks. Place in a medium pot and cover with at least 2 inches of water. Bring to a boil and cook until potatoes are very tender, about 20 to 30 minutes. Drain potatoes and add to a medium bowl.
Add almond milk, cinnamon, flaxseed, and Golden Superfood Bliss to the bowl with the sweet potato. Mash the ingredients together until you’ve reached your desired consistency.
Top with any ingredients you like and enjoy!
