Celebrate Cinco de Mayo with these delicious, crowd-pleasing sheet pan nachos! Plus, the dairy-free cauliflower queso pack a nourishing little secret.
1 teaspoon olive oil
3 cups cauliflower florets
1 cup sliced onions
3 cloves garlic
1 jalapeno, sliced
1/4 cup whole raw cashews
1/2 teaspoon paprika
1/4 teaspoon turmeric powder
1/2 teaspoon salt
1/2 cup water
2 scoops Collagen Peptides
1/2 cup nutritional yeast
1/2 cup almond milk
1 bag whole grain tortilla chips
1 can black beans, drained and rinsed
1/4 cup chopped red onions
1 sliced jalapeno
1 Roma tomato, deseeded and diced
2-3 tablespoons sliced black olives
1 medium avocado, diced
1/4 cup plain Greek yogurt
2 tablespoon chopped fresh cilantro
1 lime, cut into wedges
Heat olive oil in a skillet over medium heat. Add cauliflower, onion, garlic, jalapeno, cashews, paprika, turmeric, salt, and water and cook, stirring occasionally, for 5-6 minutes until the cauliflower is tender.
Remove vegetable mixture from heat and let it cool slightly. Transfer the mixture to a high-powered blender along with the Collagen Peptides, nutritional yeast, and almond milk. Blend for 2-3 minutes until smooth and creamy. Set aside.
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Spread the tortilla chips evenly over the baking sheet, then top with the black beans, chopped onion, jalapeno, and black olives. Place the baking sheet in the oven and let bake for 5-7 minutes, until warmed through.
Remove the baking sheet from the oven and drizzle with the cauliflower queso. Place the baking sheet back in the oven for 2-3 minutes to warm the queso, if desired.
Top the sheet pan nachos with diced avocado, dollops of Green yogurt, and cilantro. Serve immediately with lime wedges.
Store any leftover queso in an airtight container in the refrigerator for up to 2 days.
