Chai Spiced Eggnog
This Chai Spiced Eggnog is so much better than the store-bought variety and easier than you’ve ever imagined! Spiced with nourishing Chai Bliss, it’s the perfect cozy drink to enjoy all season long.
2 large eggs
1/2 cup coconut cream
1/2 cup coconut milk
1/4 cup coconut sugar
1 scoop Chai Bliss
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 shots brandy, optional
Take eggs and separate the yolks from whites, placing the yolks in a small bowl. Cover and refrigerate the whites for use in another recipe. Whisk the yolks until smooth and set aside.
In a medium saucepan over medium-low heat, combine the coconut cream, coconut milk, coconut sugar, and egg. Whisk to combine. Heat until simmering, whisking regularly. Be patient as this step could take up to 10-15 minutes. Once it starts simmering, remove from heat.
Whisk in Chai Bliss, cinnamon, and vanilla extract. Let cool for 15-30 minutes, then cover and refrigerate for at least a few hours to fully chill. Overnight is ideal.
Remove the mixture from the refrigerator. Strain through a fine mesh strainer and serve chilled.
Add a shot of brandy to each serving for a boozy option.
This recipe is easily doubled if you’d like to make more than two servings.
